 Fruit Chicken Salad
Serves 4 Cooking time (approximately): 10 minutes
~Ingredients
1 broiler chicken, boiled with salt on medium heat for 7-10 minutes, deboned and chopped 1 cup pineapple chunks 1 cup grapes 1 cup orange sections 1 cup mayonnaise 1 cup chopped celery 1/3 cup chopped onion 1 cup chow mein noodles (comes in packets and is available in at store stocking food products) 1 cup lettuce
~Method
Mix the first seven items well.
Cover and chill.
Just before serving, mix in the lettuce and crushed chow mein noodles.
Note: This dish tastes delicious and fruity. The noodles add an interesting crunch. The salad is rich in protein, Vitamin B and C. Mayonnaise adds to the taste, but you can reduced the amount suggested if you want make it less fattening.
